I have talked my mom into some doosies over the years. Mom had her tubes tied, and shockingly I came along despite my parents best efforts of being done with raising children as my two sisters were nearly graduated from high school. Mom will later tell you, that God just knew I would be needed later on.
Testing my Mom’s patience is something of an Olympic sport as I grew up, of course it didn’t take much especially as I grew into a young adult. Many years ago but not so long ago, we had a local FM radio station. This was before no commercial music could be streamed as it is now. There wasn’t a local business that didn’t have the Mix Drive at 5 on the radio. From time to time, they would have a quiz-like pop question and whatever answer or feat that you could do first, you would win a prize. It was usually tickets for 2 to a show, maybe a concert, or dinner but it was usually the day before the event or whenever it required you to be there. So you had to hustle on the spot.
Somewhat scandalous for the time, circa (2000s) but common in places like Vegas, they had an all male revue touring and one stop was in Knoxville, TN. You probably never heard of Thunder from Downunder, but they were Australia’s version of Chippendales. The radio personality said we got 3 tickets to give away and we want this to be fun for listeners, so the first lady that comes down to the station this evening wearing a pair of cowboy boots and denim shorts wins. I was well over a hundred pounds lighter than what I am now and showed horses, I normally had a barrel racing saddle and pair of boots in the back seat of my car at any given time. I was working at the call center and took an emergency break to run out to my car to put on my boots and race to get the tickets. I’m competitive and aside from that, honestly, I couldn’t tell you why I thought I needed those tickets. Then I realized, I was dressed in khaki pants and a dress shirt, no daisy Duke denim shorts anywhere in the hoard in my back seat or trunk. I had the station turned up and in between songs they stated that no one had yet shown up.
I knew I couldn’t slip off to my apartment at the time for shorts and it hit me, I need to call my Mom. I know your thinking, yes have your Mom bring you some shorts but I had a better plan. I called Mom and told her the radio station had me a gift, but she had to hurry or someone would get it instead. I needed her to put on a pair of boots and denim shorts and hurry down to the radio station. I didn’t tell Mom what the prize was. Mom flew from Flat Lick down to the radio station dressed as requested, walked in and said, I’m here as if they were waiting on her to arrive. Mom said 2 older men confused but politely congratulated her and handed her tickets. She immediately called me and asked, what is the Thunder from Down Under? Mom’s reaction probably can’t be printed here.

Cast Iron Biscuits

INGREDIENTS

❏ 2 c. self rising flour
❏ 1 1/2 c. heavy whipping cream

DIRECTIONS

In medium bowl combine the 2 ingredients, mixing well until a thick dough forms. On a lightly floured surface, knead dough back and forth 3-4 times. Can mash out with hands or rolling pin, roll and cut out 6-8 biscuits. Arrange biscuits in cast iron griddle or med-large skillet lightly greased with butter or bacon grease/lard. With a brush, sparingly and lightly dab some whipping cream on tops of biscuits, bake until done, tops should be golden brown. Remove from heat, enjoy.
